- 8 oz Orkney sirloin steak
- 7 oz baby sweet corn
- 1/2 green paper, 1/2 red pepper, 1/2 yellow pepper
- Vegetable oil
- Fresh basil
- 1 tsp Thai green curry paste
- 8 floz coconut milk
- 2 tsp Thai fish sauce
- 1 tsp soft brown sugar
- 3 oz sliced mushrooms
Cut steak into stripes. Slice sweetcorn and peppers into stripes. Heat oil in a wok or frying pan until very hot. Add steak and cook for 3-4 minutes. Strain steak and keep it warm. Put curry paste into wok and cook for 1 minute. Add coconut milk, fish sauce, sugar, sweetcorn, peppers and mushrooms. Simmer for 5 minutes. Add steak and basil, cook for a further 2 minutes. Serve with noodles or rice.
